Malcolm heads the Venners Consulting division, the UK’s leading specialists in Profit and Control for the hospitality industry. Malcolm has over 30 years’ experience of studying and working within the Industry and has been with Venners since 1996.
His operational and analytical experience lead him to being an integral part of Venners expansion into specialist services to complement their stocktaking expertise. Adding Health & Safety and Compliance auditing to the Venners brand has provided a diverse model that has become invaluable to Venners many clients.
Having led Venners involvement in controlling stock and profits at major events such as Ascot, Olympic Park, Twickenham and Music Festivals, Malcolm has unprecedented knowledge of large scale operations across the event industry.
With a particular penchant for finding solutions to complex problems, Malcolm oversees the Consultancy projects and helps bring the wealth of data into a succinct report that focuses on achieving maximum profit and control.
James has extensive, independent, management experience of all levels within hotels, restaurants and as a licensee.
As a former Bar Manager, Chef, General Manager and Operator, plus ten years of auditing all kinds of hospitality business throughout the UK and a further 10 years as Operations Manager for Venners, James has a wealth of experience.
In response to customer demand in 2012, James began creating and implementing a new suite of Food Consultancy services which analyses food costs, identifies operational shortfalls, highlights causes of margin erosion and resolves these issues to improve client profitability.
Now in everyday use, Venners Food Consultancy is proving incredibly helpful and a great return on investment for our customers.
Senior Operations Consultant
Duncan is the newest member of the consultancy team. He has amassed over 25 years’ experience working in senior management posts for hospitality businesses, including hotels, restaurants, bars and contract caterers.
Duncan has considerable and proven expertise for growing and developing catering and hospitality businesses, showcasing his wide ranging capabilities as managing director of his own successful companies. Duncan joined Venners following the successful sale of his bar and restaurant business and is keen to offer guidance and support in the operational challenges that face the industry today.
Duncan has an eye for detail and understands the demands that running a large staff and multi-site operation can present, especially when trying to maintain standards of service or procedure. Duncan works closely with the compliance team in assisting a growing number of clients to develop their operating standards or to improve on policies and procedures that may be leading to stock, financial or reputational loss.
Senior H&S Consultant
Stephanie has a long and distinguished career in Health & Safety auditing and management. Stephanie has successfully dealt with and resolved all manner of H&S issues for a very broad range of hospitality businesses and is qualified to Diploma level in Food Hygiene. She is a CIEH Registered Trainer in Food Hygiene, an Allergen Management expert and a member of IOSH (Institution of Occupational Safety and Health).
Previously employed by SAI Global as an Auditor, Trainer and Account Manager, Stephanie has also successfully managed Health & Safety for key retail accounts such as Waitrose, Tesco and BP.
Stephanie worked on the Better Regulation Project with the Cornwall local authority and has first-hand experience of starting, managing and selling her own restaurant concept and thus understands the challenges of both operating and abiding with health and safety requirements.
Senior Audit Consultant
Pete joined Venners in 2000 and is vastly experienced in all aspects of auditing. Prior to becoming Audit Manager and a consultant for Venners, Pete held several management positions with WHSmith and Marston’s. Pete has been heavily involved in the implementation of bespoke audits for retail sites, licensed premises, leisure centres and contract caterers.
Whilst at Martson’s, Pete developed a food stocktake program and computerised audit reporting system for the stocktakers and was an integral member of the steering committee for the selection of the back office PC and till system, which is still in use.
Transferring to Venners he was immediately involved in Marston’s back office system trials, and after install became the “Go to Guy” for the new system. During his time at Venners, Pete has built many bespoke Audit programs for clients including Deltic, BaxterStorey and Shearings to name just a few, as well as being our Audit Manager and Consultant on many projects.
